French Laundry's R&D Chef Lena Kwak on Co-Founding a Gluten ...

In this episode our guest is Lena Kwak and she shares how she became a research and development chef and co-founded Cup 4 Cup, a gluten free flour company with Thomas Keller. She helps us to accomplish our mission to provide you with expert advice from people that are profitably operating food businesses and doing great things with in culinary culture.

From The French Laundry kitchen, Lena tests many types of unique new product and healthy alternatives for the daily tasting menu. It was during a dinner service that Kwak witnessed a guest with tears of joy having enjoyed her first taste of gluten free brioche. The woman had not consumed bread in over a decade. Kwak knew this experience had to be shared. Lena is not gluten-intolerant though she is excited to bring the artisan quality of The French Laundry for you to experience in your own home kitchen.

With her self starter attitude and the support of Thomas Keller, she refined the proprietary blend of flour and set about making it available to a broader market. They formed a company and named it C4C, an abbreviation of common cooking measurements, to reflect the new product?s ability to replace all-purpose flour in most recipes, ?cup for cup.?
